Healthy Applesauce/Oatmeal Muffins

And delicious and moist, too.

Muffins
1 1/2 cups oats (quick or old-fashioned)
1 1/4 cups flour
3/4 teaspoon cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup unsweetened applesauce
1/2 cup soy milk
1/2 cup firmly packed brown sugar
3 tablespoons vegetable oil
1 egg white
1 teaspoon vanilla
Raisins, apples, blueberries, chocolate chips (I did raisins)

Topping (I doubled this per recipe's suggestion, but think the muffins would be great without any topping)
1/4 cup oats (quick or old-fashioned)
1 tablespoon firmly packed brown sugar
1/8 teaspoon cinnamon
1 tablespoon oil, melted

Directions:
For muffins, mix all wet ingredients. Add in dry ingredients (I do baking powder and baking soda first).
Mix topping ingredients together and sprinkle on top
Bake at 400F for 20-22 minutes.

The Rest of Central Europe

I mean the rest of central Europe that we visited, namely Budapest and Vienna. Better late than never.

BUDAPEST

First because... we went there first. I'm not feeling very creative.

The highlight of Budapest, and perhaps even the whole trip, was the Parliament building.

See the black left side? It's not just a shadow. We learned that the building is made of limestone, which absorbs dirt and has to be cleaned. They were partway through...

 

The interior of the building was just as beautiful. And we were lucky to see it! You had to go the same day to get tickets for the tour (the only way to get in), and you had to get there before they ran out.

Shoes represent the location of Nazis shooting Jews into the river. Where we went, we saw remnants of the tragedies. 

Parliament wasn't the only beautiful thing. View of Pest from Buda (this time I actually looked it up; that said, not going back...), then street of Pest.

Another highlight of Budapest was the gorgeous opera house. We went to theaters in all three cities, and this was my favorite, even more than the famous Vienna opera house. And I don't even like gold.

Ignore the scary birds. We didn't see that show; we saw a (possibly equally strange) modern-ish ballet.

Random building I liked.

Fun indoor market. Be careful, small black grapes can look like blueberries. And have huge seeds.

An extravagant, neo-Orthodox (or something) synagogue.

VIENNA

My favorite of the three cities. The streets were gorgeous:
